Last week I had the privilege to teach at Gairloch high school. I was invited by head of hospitality Julie Brady to teach a class how to cook one of my dishes. This was also to educate about the history, the flavours and techniques used by Caribbean people. The girls and boys were an absolute delight to be with and they did so well. I must admit it was a tall order to get them to cook my one of my favourite dishes, Channa chickpea curry with Bara flat bread, pickled cucumber and red onion. To do all of this within 2 1/2 hours was a lot but they did it and it was a fantastic experience; I really enjoyed it. I was terrified to start with but they made me feel so welcome and at ease, I’d happily do it again.
